Yummy mmm hmm!  Now compare this picture to Burger King’s breakfast bowl?  I don’t know about you but I’m speechless.  I thought of this idea and took a bowl to work several times a week.  These days I do not have the turkey sausage, I added mushrooms instead.  You have got to try this recipe.  So delicious…Lets Grub!

  • 1 tbsp oil
  • 1 cup spinach
  • 1 white potato
  • 1 scotch bonnet
  • 1/2 Honeysuckle smoked turkey sausage
  • 2 eggs
  • 2 roma tomatoes chopped
  • 1 tsp lemon pepper
  • 1/2 cup shredded cheddar cheese

—– mix eggs with lemon pepper and scramble in a non-stick frying pan then remove.  While pan is still hot add oil.  Fry potatoes and right before they are golden brown add scotch bonnet and sausage.  Let this cook for about 2 mins then add spinach.  Cook for another 5 mins.  Toss in eggs and tomatoes then place in a bowl.  Top with shredded cheddar cheese and enjoy!

Radish Soup Anyone?

Hey everyone!  Can you believe this is the first time I had radish?  It’s true.  I love spicy foods and this was a delicious.  It fits well with cold weather.  I’m a fan of Korean cook Maangchi on youtube and I have a list of her recipes saved so I can give them a try.  The recipe calls for beef but I used meatless crumbles.  You can not tell the difference at all.  Well…It taste much better meatless!  Radish like the onion is an anti-cancer and the rice is an added treat 🙂  Lets Grub!

Wood Ear Mushrooms, Cucumbers and Eggs O My!

Hey Food Lovers!  Ok so I wrote on my tidbits page last week that I would upload the recipe I found for Wood Ear mushrooms.  Before trying this recipe, I was eating a lot of dishes with Button, Portobello, Shiitake and Oyster mushrooms.  After subscribing to ChineseHealthyCook on youtube for a Dried Shrimp recipe, I came across a video for the Wood Ear Recipe.  It calls for the dried ones and you must soak them for 20 or more minutes.  It was worth the try and I love the texture.  The texture kind of reminds me of chicken skin or pork.  Not that I miss eating that stuff, this gives you an idea of what it feels like 🙂  Now that taste is bland and this recipe only uses salt and white pepper powder but I’m sure you health nuts and vegans know how to spice it up to your taste.  I liked it just as is.  The green onion and white pepper powder was good enough for me.  Ok ok, I added a lil Soy sauce LOL!  Let’s Grub

Fried Tortilla with Hummus

I love hummus!  I am surely going to take the time to make my own but Sabra will do now.  One summer day, I was thinking of what I wanted to eat and for some reason hummus came to mind.  I didn’t want hummus and baked pita chips for dinner so I decided to turn this into a festive occasion!  I read that hummus contains vitamins, minerals and amino acids.  I didn’t know chickpeas were so tasty.  Chopping up all kinds of veggies is fun and everyone enjoyed this happy feast.  Lets Grub!

What I used:

Toppings

  • 1 carrot shredded
  • 1/4 cabbage thinly sliced
  • 1 tomato thinly sliced
  • 1/2 red onion thinly sliced
  • 1 zucchini thinly sliced
  • your favorite salsa

Tortillas

  • pack of small tortillas
  • 1 container of Sabra’s roasted red pepper hummus
  • 4 TBSP canola oil

— fill each tortilla with the desired amount of hummus but keep away from the edges and roll them up.  Heat up a pan on medium heat then add oil.  Fry the stuffed tortilla with the folded side down first.  Fry each side until golden brown.  Drain fried tortilla on a paper towel.  Place on a plate and add your toppings.  Lastly top with your favorite salsa.  Slice up your dish and enjoy!

See you next time!

For Pizza Lovers! Cauliflower Crust

Hey there!  I know it’s Monday and we are usually thinking about pizza on Thursday or Friday right.  Well I woke up thinking about pizza this morning for some reason and thought I would share a recipe I tried recently.  I was looking for an alternative pizza crust and heard that cauliflower makes a great one.  That’s when I found NutristaNutrition on YouTube   Her video was entertaining as well.  I love when videos are entertaining and get right to the point!

After viewing the video, I realized I did not have the proper tools I needed but it turned out great.  It just took me longer.  As suggested in the video, do not shred the cauliflower with a hand grater…OUCH my wrists!  I did not have a food processor, I was cooking at a friend’s house.  Thanks a lot friend.

Cauliflower is a great way to go because it’s healthier and gluten-free!

This is what I used for my toppings:

– 3 cups homemade pizza sauce

– 1/2 white onion thinly sliced

– one tomato sliced

– several slices of turkey pastrami

– one green pepper finely sliced

– 1/5 cup cilantro

– 2 1/5 cups of Mozzerella

Hello and welcome to my blog. If you love to eat and you love good healthy food, you have come to the right place! Every now and then I will post some of my original recipes too or just talk about a dish. Either way, we are going to have some fun!  Lets start off with one of my favorites.

Gordon Ramsay is one great chef I have been following for some time.  I did not feed into his behavior much on Hell’s kitchen but the way he prepares a meal is so well done, you crave the thought of what it taste like.  That’s why I had to try this dish.  The sticky lemon chicken came out sweet and spicy.  So good and comes right off the bone.  The aroma enticed my sense of smell and exploded my taste buds   It’s hard to not over eat so cook with moderate proportions   The left overs are not as good as when it first comes out the pan.  See ya on the next blog…Lets Grub!
